Artisan Control -  Cheese aging and other drying applications

 

Most cheese aging room controls cool the space to remove moisture and then add back heat to replace the required BTU’s.  The SDI Environmental Control, with either refrigerant or hydronic (water) systems, manages the relative humidity in the room by managing Vapor Pressure.  Vapor Pressure management is the essence of control, no wild swings, no dead spots in the system– just a constant state.  Cheese makers using this system combined with the SDI Air Handlers are reporting significant improvements in consistency and yield.

XM Control -  Meat processing/aging drying applications

 

Proper curing, drying and aging of salami, prosciutto and other charcuterie are the key to consistent quality and good yield.  It is critical to maintain a consistent temperature and dew point in your space so you can effectively manage both seasonal shifts and changes in load.

 

The SDI 'XM' Control System is specifically designed for the meat processing industry.  The system uses multi-sensor technology  to maintain precise temperature &  dew point - so the room can be maintained at a very specific Relative Humidity level. This 'constant state' is critical to preventing case hardening.  Unlike typical systems that operate in an on/off fashion, the SDI system modulates, keeping the room in constant control.
