Plastic and Stainless Peg Mills (designed by Sanitary Design Industries)
Sometimes known as a Stilton Mill, this equipment was traditionally used to reduce the curd size and ensure even distribution of salt. Chip mills differ from Peg Mills in that Chip Mills cut cheese with knives, whereas Peg Mills gently pull apart the cheese. In effect, the Peg Mill produces a random curd chunk of varying size. When the cheese is pressed back together it creates a characteristic seamy look.
Applications Stilton, Cheshire, Wensyldale, Cheddar, Crumbled Feta, Curds for retail.
